It all started with a diagnosis of Type 2 Diabetes in June of 2024. With the commitment to regain my health and beat that diagnosis, I set out to remove all sugars, chemicals, and additives from my diet.
Given these restrictions, the remaining condiment selection was extremely limited. On a trip to Arizona, I discovered a company that sold hot sauce packaged in a small wooden outhouse. One taste and I was hooked! In trying to find other options, I came across an article on the possible benefits of eating hot sauce. Intrigued, I set out to expand my palate with the numerous hot sauce companies out there. I only purchased no-sugar, no-chemical sauces and soon discovered that there was only a handful of companies that fit my restrictions.
By the Spring of 2025, I felt I could create hot sauce to fit my standards of taste vs heat. I set out naively and started making small batches for myself. Through several iterations (some decent, some bad, some explosive!), I came to develop my current recipe. It is only nine healthy ingredients that balance taste and heat - anyone can make sauce hot, but can they make it taste good?
